If you want authentic analogue character — Diva. It is the closest thing in software to the behaviour of a real analogue polysynth, including the unpredictability. Expect it to use noticeably more CPU than other synths; that is the trade being made, and you can lower the quality setting while writing and raise it when rendering.
If you want depth and sound design range — Zebra 3. A blank canvas rather than a recreation of anything. Steepest learning curve in the range, and the highest ceiling.
If you want vintage monosynth and polysynth sounds specifically — Repro. Two well-known instruments, one licence, and far more usable straight out of the box than Zebra.
If you want to work fast — Hive 2. Light on CPU, quick to navigate, and strong on modern electronic sounds.
If you want to patch from scratch — Bazille for digital modular, ACE for a cheaper semi-modular starting point.

u-he publishes fully functional demo versions of its plugins on its own website, typically with a periodic reminder noise rather than a time limit. Worth trying Diva in particular before buying, since its CPU load is the main thing people want to test on their own machine.
Because it models analogue circuit behaviour continuously rather than approximating it, which is exactly what makes it sound the way it does. Use a lower quality setting — Draft or Fast — while writing, then switch to Great or Offline when you bounce. Freezing or rendering tracks as you go also helps.
Repro-1 is a monophonic synth modelled on the Sequential Pro-One, suited to basses and leads. Repro-5 is a five-voice polyphonic instrument modelled on the Prophet-5, suited to pads and chords. Both are included in the single Repro licence — you do not choose between them.
